Source: GoogleMade a reservation for a table and pre-ordered in advance for lunch on a weekend. The order included a three meat pack and also added extra meats, sides, sauces and cornbread. The price was reasonable for the amount of food for two, especially the sides which are $5 each for regular size. Tried all the standard meats on the menu and the standout was the smoked brisket; it was tender and flavoursome from the dry rub and the fatty parts, don't even need any sauces if you want to keep it simple and savoury. The bacon lamb ribs was coated with a sweet maple like glaze which was very tasty; the skin and meat has a bit of chew to it but the ribs I had didn't have much meat on it. The pulled pork was very tender and moist with a briny taste; it paired well with the BBQ or mustard sauce and pickles which added some sweetness and acidity to the mix. The cheesy jalapeno sausage had a snappy bite to it with a nice savouriness and a bit of heat. The smoked garlic butter chicken breast was tender and not dry at all; it was tasty with the creamy white mayo based sauce. Also tried all the sides and they were not as impressive as the meats. The slaw was creamy and crisp with a pleasant truffle fragrance, and the fried rice was decent, not wet or too dry. The campfire beans might be better if it was cooked a bit longer, and my least favourite was the mac and cheese which was too soft and tasted bland; it wasn't cheesy at all. Finished the meal with the cornbread which was soft and crumbly with the added texture from the bits of corn kernel blended in. It was sweet and tasty with the honey butter glaze. Overall a pretty tasty and satisfying meal and the service was good.
I hate do this however, As a highly confessed lover of most foods & eat around the world, the team’s service, the intensely high level service, the incredible commitment to consistency and the fact they sell out every session of there opening times is a testament to Wildfire being the best on the Bellarine, they do pop ups and sell out every where they go is saying that Victoria has the best low & slow bbq in its possession. For someone to give a 2 star review is also showing how amazing the bbq is out of this restaurant. It’s ok because clearly they are just short on education on high level lie & Slow bbq. There is no more perfectly cooked consistent brisket in the state and country and the other items on the menu of which leave me in a dilemma every single time…. But the latest special- The Brisket tartare made me come back and treat myself to a self paid valentines gift and have another since last nite and ensure I have another… before they sell out too.. Disclaimer I do not get any special treatment just because I am super consistent, with low & Slow part of the enjoyment is the fact you may miss out. The biggest and best result of an amazing restaurant is being patient for something that takes a lot of time and effort that goes into something as special as this. So I say this, I don’t like to share, but I am happy to pay for the 2 star review person treat them to another meal at Wildfire and coach them through what it takes to make consistent perfection. Or not & I get the serve that you don’t… keep it up team… and to all victorians and travellers to he area get in & enjoy!!
On our first visit, we pre-ordered the “Tree meat pack“as recommended by the staff. The chicken in particular was moist and really delicious. We liked Signature BBQ sauce.The “brisket burger “was salty&cheesy, and was probably my favorite!

In terms of the overall experience and consistency across the menu, this has probably been the most enjoyable barbecue visit I’ve had 🍖🔥 I have had better individual items elsewhere, brisket depending on the batch, but when it comes to consistency across the board, Wild Craft easily takes a top spot for me. I wouldn’t come here just for barbecue, but I was in the area catching up with mates and left very happy with zero regrets. My favourite item of the day was easily the smoked brisket cheeseburger 🍔. One of the boys commented that the brisket looked very red, but I actually loved it like that. Juicy, packed with flavour, and just hit the spot. Other highlights were definitely the lamb ribs and the brisket itself. Very fatty, melt-in-your-mouth, with that proper smoky flavour infused right through the meat. The sasuage was very fatty and very tasty did rate it. The pulled pork and chicken were also better than most places I’ve tried, and that goes for both items. Anything involving brisket here was a win 🤌 The pulled pork sandwich was juicy with a nice balance going on, but the brisket sandwich definitely outshined it. The tacos were probably the one thing I wouldn’t get again. Not bad, and still better than a lot of tacos around Melbourne, but nothing too memorable even though the brisket on it was solid. We ordered the Pit Master Pack for $145 and added an extra 400g of brisket at $22 per 200g. Pre-ordered online, walked in, gave my name, and they put the whole platter together fresh, which was super smooth. Sides were decent across the board. The fried rice was a nice touch and something you don’t see everywhere. The bacon baked potatoes were solid. The mac and cheese was interesting, more of a mayo-style creaminess rather than thick cheesy. I can see why some people would like it, and why others might not. Overall, very consistent barbecue, strong menu, and a place I’d happily return to if I’m ever going to ever want to eat American bbq again
This was the best sanga we’ve ever had!! We were driving through Geelong and wanted a quick bite, jumped on TikTok and found this gem! It absolutely lives up to the hype. We had the French Dip Sanga and it was amazing! Great value for money, you can’t go wrong. We will be back to try the rest of the menu!
